The Infinitus winery is located in the Rio Negro Valley in Patagonia at 40º of latitude South, the most southerly vine growing region of America.
In this untamed region, almost unexplored, some 1.200 Km
south from Mendoza, were born the blends named Infinitus, offering to wine lovers the lemony aromas of the Semillon, the elegance of the Chardonnay, the typicality of the Argentinean Malbec, the strength of the Cabernet Sauvignon and the smooth roundness of the Merlot.
Those wines from the extremity of the world benefit from a very unique personality thanks to the soil of the desert where the sunny days and cold austral nights provide a very harmonic balance. There, the magic of the Terroir confers unique aromas, flavors and structure.
In Patagonia, Domaine Vistalba uses the same tradition and “Savoir Faire” from Bordeaux as they do in Mendoza. The 50 hectares of vines are cultivated in a very traditional way without herbicides in order to respect and get the maximum expression of the terroir. Short pruning allow us to maintain low yielding of 50 hectoliters per hectare on average. Moreover, in November, part of the crop is sometimes sacrificed in order to get better concentration and ripening.
During harvest, the grapes are gathered at their peak of maturity in small baskets of 20 Kilos. At the winery, the grapes are sorted in order to eliminate those that have been damaged or that are not in perfect conditions. The fermentation is carried out with natural yeasts at controlled temperature conditions with a skin contact of 25 days to extract the best tannins.
Pressing is performed by a traditional hydraulic press.
The Infinitus wines are aged in tanks to get a pure expression of the complexity due to the association of the different varieties.
Prior to the bottling, the wines are fined with egg whites assuring perfect clarity without altering their personality or structure. After a very smooth filtration the wine is bottled under vacuum system to restore a normal pressure in the bottles.
